Apple and Maple Spiced Cobbler
Serves 4-6
2 pounds apples (about 6)
1/2 teaspoon freshly grated nutmeg (if not using fresh grated use less)
1/2 cup whole wheat pastry flour
1/3 cup oat bran
1/3 rolled oats (not instant)
1 1/4 teaspoons cinnamon
1/4 teaspoon coarse salt
1/2 cup maple syrup
1/4 melted butter or canola oil
Garnish with whipped cream and apples chips
1. Pre-heat oven to 375 degrees. Peel half of the apples (I like to leave some apple with skin on for flavor and texture). Cut all the apples into roughly 1/2 inch pieces and place in mixing bowl. Add nutmeg and mix well. Place apple mixture into desired baking dish such as a pie dish, casserole pan, or 1 cup ball jars.
- In the same bowl mix flour, oat bran, oats, cinnamon, and salt together. Add syrup and oil. Mix well with fork or small whisk. Spoon topping mixture over the apples.
- Place on center rack in oven and bake for 45-50 minutes if baking in pie dish size baking dish. If baking in individual smaller dishes, bake for 25-30 minutes.
- Remove from oven and let cool off. Serve with whipped cream and apple chips.
Apple Chips
Apples
Pre-heat oven to 200 degrees. Thinly slice apples and place nearly touching each other on silpat lined sheet tray. Bake slices in middle of oven until pale golden and beginning to crisp, about 1 1/2 hours. Immediately peel chips off pad and cool on a rack.
